  • 1/2 tsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup granulated sugar (for rolling dough)

Instructions

  1. To prepare the cheesecake filling, mix cream cheese, sugar, and vanilla until smooth. Set aside.
  2. In another bowl, combine diced strawberries with 1/4 cup sugar and let sit for 10 minutes.
  3. In a large bowl, beat softened butter with 1 cup sugar until fluffy. Add egg and vanilla; mix well.
  4. In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to wet ingredients.
  5. Fold in macerated strawberries gently.
  6. Preheat oven to 350°F (175°C). Scoop dough onto a lined baking sheet; create an indentation in each ball and fill with cheesecake mixture.
