  • 1 medium spaghetti squash
  • 1 lb ground beef
  • 2 cloves garlic
  • 1/2 cup marinara sauce
  • 2/3 cup ricotta cheese
  • 1/3 cup grated parmesan cheese
  • 2/3 cup shredded mozzarella cheese
  • Olive oil
  • Sea salt
  • Black pepper
  • Italian seasoning

Instructions

  1. Preheat oven to 400°F (200°C). Halve the spaghetti squash lengthwise and scoop out seeds.
  2. Drizzle with olive oil and sprinkle with salt. Bake cut-side down for 30–35 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Sauté minced garlic before adding ground beef, salt, and pepper. Cook until browned.
  4. Stir in marinara sauce and Italian seasoning; simmer briefly.
  5. In a bowl, mix ricotta, parmesan, and additional salt.
  6. Scrape out some flesh from the cooked squash to create space for filling. Layer meat mixture and ricotta blend into each half. Top with mozzarella.
  7. Bake stuffed squash for an additional 10–15 minutes until cheeses are melted and bubbly.
