  • 2 Sweet Potatoes, quartered
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 1 Bay Leaf
  • 5 Cups Chicken Broth
  • 1 Cup Cream
  • Zest and juice of 1 Lemon
  • Salt and Pepper to taste
  • Optional: Crumbled Goat Cheese or Feta for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange sweet potatoes and apple on a greased baking sheet; roast for about 40 minutes until tender.
  3. Let cool, then peel the sweet potatoes.
  4. In a soup pot, heat olive oil over medium heat; sauté onion, celery, bay leaf, and carrot until tender.
  5. Remove bay leaf; add chicken broth along with roasted sweet potato and apple pieces.
  6. Blend until smooth using a blender or immersion blender.
  7. Return mixture to the pot; stir in cream, lemon zest, and juice until combined.
  8. Season with salt and pepper; gently heat without boiling.
  9. Serve garnished with crumbled cheese if desired.
