  • 1/2 tsp xanthan gum
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 oz cream cheese (room temp)
  • 3/4 cup unsalted butter (melted)
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1 1/2 tsp pure vanilla extract
  • 2 egg yolks
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Whisk together flour, xanthan gum, baking soda, and salt in a bowl.
  2. In a stand mixer, blend cream cheese and melted butter. Add sugars and mix until combined.
  3. Add vanilla extract and egg yolks one at a time while mixing.
  4. Gradually incorporate the dry mixture until just blended.
  5. Fold in chocolate chips.
  6. Cover and refrigerate the dough for at least four hours or up to four days.
  7. Preheat the oven to 375°F and line cookie sheets with parchment paper.
  8. Scoop even mounds of dough onto prepared sheets, spacing them apart.
  9. Bake for about 11–12 minutes until edges are set but centers are slightly undercooked.
  10. Cool slightly before transferring to a rack.
