  • 3 cans (15 oz) cannellini beans (drained and rinsed)
  • 1 yellow onion (finely chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 2 large carrots (peeled and chopped)
  • 1 stalk celery (diced)
  • 1/3 cup white apple vinegar
  • 2 cups chopped kale
  • 2.54 cups vegetable broth
  • Spices: tomato paste, salt, black pepper, red pepper flakes, Italian seasoning, bay leaves, dried thyme, dried oregano

Instructions

  1. Sauté onion in olive oil until golden brown.
  2. Add garlic, celery, and carrots; cook for 10 minutes.
  3. Deglaze with vinegar until evaporated.
  4. Stir in remaining ingredients except kale; start with 2.5 cups broth.
  5. Bring to a boil; then cover and simmer for 15 minutes.
  6. Blend part of the soup until smooth; return to pot.
  7. Stir in kale; simmer until wilted.
  8. Serve warm with bread.
