  • 3 large carrots
  • 2 ribs celery
  • 5 cloves garlic
  • 1 medium rutabaga
  • 4 large potatoes
  • ¼ head green cabbage
  • 4 cups vegetable stock
  • ¼ cup soy sauce
  • 330 ml Guinness (optional)
  • 9 oz vegan beef or portobello mushrooms (optional)

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden, then set aside.
  3. Lower heat to medium and sauté onions, carrots, and celery until softened; add garlic.
  4. Stir in flour and cook for a minute to eliminate raw taste.
  5. Gradually add Guinness while stirring to avoid lumps.
  6. Incorporate rutabaga, potatoes, cabbage, stock, soy sauce, spices, and herbs; stir well.
  7. Bring to a boil, then reduce heat and simmer uncovered for about 45 minutes until potatoes are tender.
  8. Return seared protein to the pot during the last ten minutes of cooking.
  9. Serve hot and enjoy!
