  • 1/2 yellow onion (chopped)
  • 1 red bell pepper (diced)
  • 3 garlic cloves (minced)
  • 1/4 cup chili powder
  • 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • 2 teaspoons unsweetened cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1 tablespoon tomato paste
  • 3 cups vegetable broth
  • 1 1/4 cups dry brown or green lentils
  • 1 (28 oz) can crushed tomatoes
  • 1 (14 oz) can black beans (drained & rinsed)
  • 3 tablespoons minced cilantro

Instructions

  1. In a large saucepan over medium heat, heat olive oil. Sauté onions until tender, about 5 minutes. Add diced red bell pepper and cook for an additional 2 minutes.
  2. Stir in minced garlic and spices (chili powder, oregano, cumin, cocoa powder, cinnamon, salt). Cook while stirring for about 1 minute, then add tomato paste and cook for another minute.
  3. Combine vegetable broth, lentils, and crushed tomatoes into the pan. Bring to a boil; reduce heat and simmer partially covered for about 30 to 35 minutes until lentils are tender.
  4. Mix in drained black beans and cook for another 5 minutes before serving hot with fresh cilantro on top.
