  • 1/2 cup unsweetened applesauce
  • 1 3/4 cups non-dairy mylk
  • 2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water)
  • 1/2 cup pure maple syrup
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Prepare flax eggs by mixing ground flaxseed with water; let sit for 5 minutes.
  3. In a large bowl, combine rolled oats, nuts, cinnamon, nutmeg, baking powder, and salt.
  4. In another bowl, mix applesauce, non-dairy mylk, flax eggs, maple syrup, and vanilla extract.
  5. Combine wet ingredients into dry ingredients and gently fold in blueberries.
